Old Primeval is the nickname of a giant snapping turtle who has long roamed the waters of Georgian Bay. It felt like a fitting title for this Barrel Aged Imperial stout, which spent 12 months in Plantation Rum barrels. Neither beer nor turtle is to be trifled with.
We've been known to enjoy adding layers of complexity through adjuncts, but it's also gratifying to showcase what an unembellished commingling of elements can produce. In this instance, we took a very tasty Imperial Stout and aged it in the most beautiful rum barrels we’ve ever laid eyes on. The barrels sealed up right away and spent the next year imparting their boozy, burnt sugar and spice characteristics unto the stout.This is a decadent and boozy sipper, with rich notes of molasses, brown sugar, and a subtle cherry hint. Get it before it returns to the deep.
