After a long primary fermentation we put this big imperial stout into cognac barrels, and let it hibernate for a year. The beer emerged velvety and rich, upgraded by our brewers this year to have a slightly lighter body and more pronounced barrel and cognac character. Higher in alcohol than 2013’s version.
What it smells and tastes like: Aromas of cognac, and oak, with rich notes of milk chocolate, espresso, and molasses on the palate. A soft sweetness balances the boozy elements, and at 12.2% it’s one to enjoy most responsibly!
