This ongoing barrel blend series is named Barn Owl, as a nod to the wise and exacting animal that keeps watch over the farmhouse. Released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking, these beers will be one-off creations never to be replicated again.
No. 7 is the third of three fruit blends made from a Flemish red base that was aged for 2-3 years in oak barrels. It underwent a secondary fermentation with 300g per liter of raspberries. As a result, it is bursting with enormous jam and raspberry seed aromas. This sour ale is dry and puckering with lingering fruit tannins.
